Moroccan Fish Recipe
Ingredients:
Olive oil
1 large red capsicum, seeded and sliced into thin strips
1 tin diced tomatoes
1 head of garlic, cloves peeled, half sliced, half crushed
1 bunch coriander leaves , chopped
1 bunch parsley leaves, chopped
1 tablespoon sweet paprika
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon salt (or to taste)
1 teaspoon black pepper
3-5 red chili peppers, fresh or dried (depending on how hot you want the food to be)
½ cup water
barramundi or other firm white fish fillets
• In a large deep pan, add olive oil and heat up for a minute over medium heat. Add the capsicum and hot chili for a few minutes until they start to soften. Add the garlic, turn down the heat and continue cooking for 1-2 minutes longer.
• Add all the spices and cook for another 2 minutes .
Add tomatoes, water, half of the chopped coriander and parsley and cook on medium heat with a lid on, stirring occasionally, for approximately 20 minutes.
•. Add the fish fillets to the sauce on the stove, making sure the fillets are covered with sauce. If there isn’t enough liquid add some water cover with a lid and cook for approximately 15 minutes longer or until the fish is cooked. in the last five minutes add the remainder of herbs, check for seasoning.
